Hedgerow Jelly Recipe
This recipe is a wonderful way to make the most of foraged bounty from hedgerows in autumn. Any combination of fruit can be used, (apples, crab apples, blackberries, damsons, rose hips, rowan berries, elderberries, plums) but ideally around half the weight should be crab apples and/or sharp cooking apples in order to add pectin to set the jelly. If no apples are available, add the juice of a lemon for this purpose. It is not necessary to peel or core the fruit, or remove stones and pips, but check over all the fruit and cut out and discard any bruises or bugs.
