Easter Chocolate and Almond Cake

Easter is the time for chocolate, getting together with friends and family, and cake!!

This intense chocolate cake isn’t the prettiest, but it is certainly one of the best-tasting cakes, and ideal for Easter, as you can decorate it with mini eggs or fresh flowers. It is delicious served warm, but the flavour intensifies overnight and tastes even better the next day. It will keep in a tin for 3 days or so – if you can resist it!!

It is very rich, so a small slice is sufficient, and lovely with a cup of strong coffee. You can even add a shot of espresso to the mix if you want to give it a denser flavour, or try a shot of scotch or rum instead of the vanilla.
